Rigatoni Pie

Rigatoni Pie is another pasta recipe, but a baked one. It is yummy, easy to make, and takes only half an hour. The best part I like about this one is – no veggies to be cut or boiled. The second best element is decorating with paneer and pasta sauce. And, yes the trickiest bit is making the pasta stand in the pan. With luck, after baking, when that same pasta remains to stand, you will feel like you have reached on cloud nine.

Making the Pie

In a bowl, whisk together paneer and egg until a paste is formed. Tip: If paneer is hard, grate it first or blend it with egg in a mixed

Oil the cake pan, and start placing each rigatoni piece one by one in a standing position.

Spread the paneer paste over the pasta evenly.

Sprinkle the cheese over the pasta sauce evenly. You can increase or decrease cheese according to your liking.

Sprinkle crushed red pepper over the cheese.

Bake it in oven at 200 c/400 F for 15 minutes or till the cheese melts.

The unique flavor comes from a combination of paneer and pasta sauce. If you savor each bite, then you can almost differentiate between the two. You can sprinkle some oregano to enhance the deliciousness.

Serves: 2 Prep Time: 20 Minutes Cooking Time: 15 Minutes

Ingredients

  • 250g Rigatoni
  • 125g Paneer (Cottage Cheese)
  • 1 cup Pasta/Pizza sauce
  • 1 tbsp Olive Oil
  • 1 cup Shredded Mozzarella Cheese
  • 1 egg
  • 1 tbsp crushed red pepper
  • Salt to taste

Instructions

Boiling the Pasta

  1. Take water in pan, add salt, bring it to boil
  2. Add Rigatoni in the hot water
  3. Boil it for 10-15 minutes or until the pasta becomes soft. Note: Do not boil till pasta starts breaking.
  4. Drain the pasta and keep it in a bowl
  5. Add oil to the pasta and mix well.
  6. Then add 2 tbsp cheese and mix well, till cheese starts sticking to each rigatoni piece
