Welcome back to another “Experiments in Kitchen” post, and this time I bring you homemade gooey and chocolaty Eggless Chocolate Lava Cake, also one of my favorites.
Eggless Chocolate Lava Cake
By now I have shared so many recipes using chocolates like Chocolate Chip Banana Bread, Double Chocolate Fudge Brownies, Chocolate Oatmeal Brownies, Chocolate Cake Topped with Chocolate Ganache, etc. I think by now you would know my love for chocolates and especially the chocolate cakes, mug cakes, brownies, cookies, etc. So it wouldn’t come as a surprise that Chocolate Lava Cake is my favorite. Let me tell you my secret, my favorite is the chocolate lava cake my husband makes. That has egg in it. When we shared the photos of the lava cakes with our families, they asked us to share a recipe for an eggless one (my mother, mother-in-law, and sister-in-law don’t eat eggs).
We searched on youtube for some eggless chocolate lava cake recipes and selected one. And shared this youtube recipe of Eggless Chocolate Lava Cake by Veg Recipes of India with them. Then we thought why not try this recipe by ourselves to compare its tastes with the Chocolate Lava Cake with Eggs that we usually make. Find out our results below.
Changes
We made only one change in the recipe, using chocolate chips instead of chunks of a chocolate bar.
Let’s begin
This one is my husband’s specialty. I was his sous-chef. I am going to narrate the steps as he followed them. I started the oven to preheat to 350 F. While he poured a half cup of whole wheat flour in our big glass bowl.
Then he added cocoa powder, baking soda and pinch of salt to the flour.
In a separate bowl, he asked me to mix sugar and water (at room temperature). Then he prepared the ramekins by brushing them with oil. And I dusted them with sugar. This facilitates the lava cakes to come out easily from the ramekins later without breaking. Next, he added vegetable oil and vanilla extract to our dry mixture.
He added lemon juice to the sugar water mixture. Then he mixed the sugar water mixture into the bowl with dry ingredients and oil. He made sure there are no lumps in the resulting. The batter is of pouring consistency and not thick.
Then he poured the batter equally into both the ramekins.
Next, he added the chocolate chips to both the ramekins and made sure they are covered with batter.
Then we placed the ramekins in the oven for the next twenty minutes. After which our chocolate lava cakes were ready. They were done from the outside but gooey from the inside. We waited for two minutes before taking the lava cakes out from the ramekins. Just enough time to take a picture in between.
This is how they looked out of the ramekins. I was swooning over them. They looked so perfect and beautiful. I didn’t want to touch them or cut them.
But I did cut them to show you the gooey insides!
How was it?
It was soft and gooey on the inside. And slightly crispy on the outside. This eggless chocolate lava cake is delicious, soft, crumbly, mouth-watering, and finger-licking good. We were skeptical initially considering the recipe used whole wheat flour instead of all-purpose flour and no eggs. But all our fears went away after that first bite itself.
We didn’t find much difference when it comes to taste or appearance between the lava cakes with egg and without egg. My sister also made these for her and my mother. They also enjoyed this recipe. So this recipe is a keeper for me.
For the next time
I don’t think this recipe needs any changes. It is perfect as it is. The recipe is simple, easy and quick to make.

- 1/2 cup whole wheat flour
- 3 tbsp cocoa powder
- Pinch of salt
- 1/4 tsp baking soda
- 1/3 cup sugar
- 1/2 cup water at room temperature
- 2 tbsp vegetable/olive oil
- 1/2 tbsp lemon juice
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350 F/ 200 C.
- In a bowl, add whole wheat flour, cocoa powder, salt and baking soda.
- Then add oil and vanilla extract.
- In another bowl mix together sugar and water until sugar completely dissolves in water
- Mix lemon juice to sugar water mixture
- Now add this lemon sugar water to the previous bowl and mix well. Make sure no lumps remain. You can use a hand mixer or whisk or fork for this step.
- Brush your ramekins with oil. Then dust them with sugar. Pour the batter equally into all your ramekins
- Keep the ramekins in oven for 20 minutes.
- After 20 minutes take the lava cakes out and let them cool down for a minute or two.
- Take them out carefully on a plate and serve hot.
