Welcome back to another “Experiments in Kitchen“ post. I know I am posting posts like this after a long time. Last year, I had been so busy taking care of my little daughter that I didn’t have time to try any new recipe. These days my experiments are more geared towards making recipes that she might like and are also nutritious and healthy for her.
I am going to make a few changes to these posts. Now I would add the recipe and the final pictures of the dish instead of the step by step ones. Then as and when time permits, I would add the step by step pictures.
Banana Oats Pancakes (Eggless)
A few months back, on a weekday, I had planned on giving milk and oats as breakfast for everyone. My daughter likes it a lot and it’s easy to prepare. Unfortunately, I was out of milk. There was no bread. I started searching for alternate oats recipe and came across this one from Shilpa Shetty on Youtube. And made this recipe.
You might be wondering why eggless? Because my mother-in-law doesn’t eat anything with eggs in them. And, I wanted to make something that everyone could enjoy.
Changes
Skipped eggs and cinnamon powder. Forgot to use vanilla extract. Used whole milk yogurt and 2% reduced fat milk. Didn’t saute the oats before grinding them. I already had some oats grinded from before. I also added chopped dates, raisins, almonds and walnuts.
Let’s Begin
I first mixed the dry ingredients (oats flour, whole wheat flour, baking soda, sugar, raisins, dates, almonds, walnuts and salt together in a bowl. Then I added the wet ingredients mashed bananas, yogurt and milk to the batter. I whisked them well until I had a thick batter without lumps.
I put on my pan with some oil drizzled over medium heat. I scooped around one ladle of batter (3-4tbsp) and poured it onto the pan and spread to give oval shape. Waited for the bubbles to appear and then flipped to cook from the other side. Repeated the same process for other pancakes until the batter got over.
How was it?
The pancakes were soft, fluffy, chewy and tasty. My mother-in-law liked them a lot. As for my daughter, she was initially fussy, but later on, she also liked them. I think they could do with a little sugar in them to make them tastier. The biggest advantage of this one – super quick and super easy to make.
For the next time
For the next time, I want to try with eggs and also not to forget the vanilla extract.
