Welcome back to another “Experiments in Kitchen“ post. But before that an update, I am happy to announce that I gave birth to a beautiful baby girl in November. Though I am starting to blog, I might be irregular in my posts. As she takes up most of my time now.
Almond Chocolate Chip Cookies
We brought Almond Flour from Costco this week. I have never made anything from almond flour before. So I started searching recipes online
Changes
I didn’t use almond extract. And replaced baking soda with baking powder.
Let’s Begin
I melted the butter in microwave. Then I added butter, baking soda, and salt to the butter. And using hand mixer, mixed the batter until smooth.
Next, I added eggs and vanilla essence to the batter and mixed them well. Next, I used the spatula to add the almond flour slowly. In the end, I mixed in the chocolate chips.
I placed a wax paper on my baking trays and coated it lightly with oil. Then I roughly took out small chunks from the batter to shape them into small balls. Then place them on the baking tray.
After preheating the oven to 350 F/180 C, I put the baking tray with cookies into the oven. Cookies were ready after 10 minutes. I took out the trays and let them cool for some minutes.
How was it?
The cookies were soft, tender and delicious. They tasted better than the ones made with all-purpose flour. Everyone at home loved them. The only caveat being they got burnt from the base a little.
For the next time
Baking these cookies for 10 minutes burnt them slightly. Next time I am going to bake them for 8 minutes and see the difference.
