Answer: Make Banana Pancakes
Have you ever had ripe bananas in your kitchen? Did your kitchen start smelling full of bananas? Have their peels turned black fully? Are they more than three or four, an amount that your family cannot consume in one go?
If you answer yes to any one of the above questions, then making pancakes is one of the best choices you have of consuming those bananas quickly. Hot pancakes with melted butter and jam really taste awesome. We even tried one with chocolate sauce, and that increased the awesomeness.
My Story
A little bit of insight into what lead these pancakes……
Last time, we (me and my hubby) bought two dozen bananas. And we delayed eating them. The result was after five days, due to unexpected hot weather, the bananas turned ripe. Their peels were black and their smell was all over the kitchen. We got worried, we might have to throw them. My last experiment with traditional pancakes was a success. So, why not try something non-traditional. And here comes, the yummilicious banana pancakes.
We had decided to make pancakes for dinner. I prepared the batter in afternoon itself, which can also be put together few minutes before cooking pancakes. I made it early because my bananas wouldn’t have lasted till night.

- Most of these ingredients would be available in your kitchen:
- 4 bananas
- 2 cups Milk
- 2 cups All Purpose Flour
- 2 eggs
- 4 tbsp Baking Powder
- 2 tbsp Oil
- 2 tbsp Sugar
- 1 tbsp Salt
Instructions
- Take a bowl, peel the bananas and mash them into a fine paste using a fork. You can grind them in the mixer too or a food processor.
- Take another bowl, mix the flour, baking powder, salt, and sugar.
- Take another bowl, whisk the eggs one by one and Milk, then add oil to the mixture. Again mix them together well.
- Then add the crushed bananas to the egg mixture and whisk them together.
- Next, add the flour mixture and gently whisk all the ingredients together. Mix such that most of the lumps are gone and the batter is thick and fluffy.
- Next, heat a pan and pour some oil on it, then using a ladle or mug pour a small quantity of batter in the pan. Keep the stove on medium heat.
- Once you start seeing little bubbles, flip it gently. It should be light brown on one side now. Keep the pancake on the pan until the other side also becomes light brown.
- Repeat steps 6 and 7 for the remaining batter.
Notes
This batter serves 4 people. If you want to make less, like for 2 people, half the quantity of all the ingredients. Happy cooking!
You can adjust the heat accordingly, like decrease it more if the pancakes are turning brown quickly.
We both loved these pancakes. The taste of bananas, slight taste of eggs in between, and the overall blend was just perfect for our taste buds. Hope they taste the same next time too.
I have some batter left and had refrigerated it in an airtight container. We have some other plans for that batter besides pancakes, let’s see how that turns out!
Also, it would be great to know if there are any other recipes using bananas that I could try.
That awesome picture of banana pancakes has been taken by my hubby, Nikhil.
