Vegetable Oats Omelette

“Who is John Galt?”

It’s a phrase which regularly appears in the novel that I am currently reading. This phrase symbolizes an unachievable task or incomprehensible events. And I thought at first, John is our main character. Maybe it turns out he is a character in the end!

Dagny Taggart, vice president of Taggart Transcontinental, is a formidable woman. She alone is keeping the railway enterprise afloat in these rough times when all the businesses are closing.

Hank Rearden, after ten years of failed experiments, has finally produced a metal which is lighter and stronger than steel. He calls this metal “Rearden Metal”. He took over an abandoned steel plant and converted it into a successful enterprise producing Rearden Metal.

His roadblock: All the scientists and businessmen have condemned the metal as dangerous and unusable, without even giving it a chance. No tests. No experiments. A nonsensical verdict.

His only customer: Dagny Taggart. She has seen what the metal could do and has high plans for it. She hopes to build the line connecting Colorado to rest of America using this metal. None of her co-workers support her. She is thrown challenges, every step of the way. From unexplained disappearances of the intelligent and hardworking workforce too small manufacturing plants going out of business on sudden notice. Politicians and bureaucrats, even his brother, conspiring together, passing bills which were inconducive to her interests. She feels tired right to her bones but doesn’t give up. Hank is helping her. They together find and help to manufacture plants from all over the country who were ready to face the ire of the world for producing parts made of Rearden metal. Hank supplies his engineers to train them and start production. He gave loans to Taggart International and other small businesses using his metal. He wanted to show the world that his metal is safe. The only way was to successfully build the railway line.

The novel is “Atlas Shrugged” by Ayn Rand. I would add the next excerpt in my next post. Keep watching for it. But for now, back to the business of cooking. This time I have Vegetables Oats Omelette for you. This is rich in proteins, good fat, minerals, and fiber. A wholesome breakfast.

Serves: 2 Prep Time: 10 Minutes Cooking Time: 10 Minutes

Ingredients

  • 1 cup of oats, processed to flour consistency in the blender
  • 4 eggs, whisked in a bowl
  • 1/2 onion finely chopped
  • 1 tbsp finely chopped ginger
  • 1 carrot grated
  • 1/2 tomato finely chopped
  • 1/2 capsicum finely chopped
  • 1 green chili finely chopped
  • 1/2 cup grated cabbage
  • 1/2 tsp coriander powder
  • 1/2 tsp chili powder
  • 1/4 cup milk
  • 1/4 tbsp turmeric powder
  • 1/4 cup chopped fresh coriander leaves
  • Oil
  • Salt to taste

Instructions

  1. Add salt, coriander powder, chili powder, turmeric powder, milk to the oats flour and whisk well, remove all lumps.
  2. Add whisked eggs to the oats mixture, again whisk well.
  3. Now mix in all the veggies (onion, tomato, capsicum, cabbage, ginger), coriander leaves and green chilies.
  4.  Pour few drops of oil on the pan, and heat it. Pour one ladle of the egg mixture into the pan and spread it evenly.
  5. Let it cook on one side. Tip: After few minutes, horizontally shake the pan a little, the omelet should be able to slide. If it slides, it has cooked from that side
  6. Flip the omelet to other side and cook again from this side.
  7. Serve the omelet hot with coriander chutney or tomato sauce.
  8. Continue making more omelet in the same way till the whole batter finishes.

 

 

The taste of eggs and spices compliments the oaty flavor making a delectable and mouth-watering omelet. Hope you try it. Enjoy..!!
